This CORN DIP will become your go-to appetizer recipe! This easy crowd-pleaser is cheesy and ultra creamy, with a slight kick from the jalapeño and a touch of sweetness from the shoe peg corn.

Ingredients

  • 2 cans shoe peg corn drained
  • 2 cups shredded sharp cheddar cheese
  • 2 jalapeños finely diced
  • 1/2 purple onion diced
  • 8 ounces sour cream
  • 2 tablespoons mayonnaise
  • Salt & Pepper to taste
  • Scoop Fritos

Instructions

  1. Drain the shoe peg corn and add to a large bowl.
  2. Add cheese, diced jalapeño, & diced onion, and stir to combine.
  3. Add sour cream and mayonnaise and stir to combine.
  4. Add fresh ground pepper and salt to taste, and place in fridge to chill.
  5. Serve with Scoop Fritos.
